Butterscotch Oatmeal Cookies!

Hello!

Alex subscribes to Jamelle Bouie's newsletter (he's a writer for Slate magazine).  He writes about lots of stuff, but sometimes he sends yummy recipes!  The most recent one was for Butterscotch Oatmeal Cookies and I had to make them!


This is his recipe exactly.
Ingredients:
1/2 cup (1 stick) of butter, softened
2/3 cup of light brown sugar, packed
1 egg
1/2 tsp vanilla
3/4 cup of all-purpose flour
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 table salt
1 1/2 cups rolled oats (I used quick oats because that what we had!)
1 1/2 cups butterscotch chips

Directions:
1) In a large bowl (I used our KitchenAid mixer), cream together butter, brown sugar, egg, and vanilla until smooth.
2) In a separate bowl, whisk the flour, baking soda, cinnamon, salt, and oats together.  Stir in butterscotch chips.
3) Chill dough in the fridge for an hour so the cookies stay thick when you bake them.
4) Preheat oven to 350 degrees.
5) Scoop the cookies two inches apart on a parchment-lined baking sheet (I used Pam instead)
6) Bake for 10-12 minutes, or until golden around the edges but the tops are still a little bit undercooked.
7) Let cool for a few minutes before moving onto a cooling rack.


 


They are soo good!  Our apartment smells very yummy!  Alex just got home from school and he's going to have one with some coffee :)
